- A carboxypeptidase is a protease enzyme that hydrolyzes (cleaves) the peptide bond of an amino acid residue at the carboxy-terminal (C-terminal) end. (Contrast with an aminopeptidase, which cleaves peptide bonds at the other end of the residue.)
